Valentine Sugar Cookies

2 cups margarine

1 cup sugar

2 eggs

6 teaspoons vanilla

6 cups flower

1 teaspoon baking powder

 

Mix the first three ingredients above in the order listed until mixed well.  Then mix in the next three ingredients in the order listed until mixed well.

 

Then chill dough (it works OK without chilling).  Roll out to 1/16 of an inch thick.  Then cut with cookie cutters, place on ungreased baking sheet and bake at 425 degrees for 5 to 7 minutes (don’t brown, if you see a tinge of brown on one, they are done).  Let cookies cool before icing.

                For double layer Valentine cookies, ice a big heart, then ice a smaller heart and put the smaller one on top of the bigger one. 

               

For icing:

 

1 stick margarine, melted

4 cups powdered (confectioners) sugar

about 4 tablespoons of milk

2 teaspoons of vanilla

 

Stir up these ingredients carefully and add slight amount of milk to right consistency and add coloring.  (Icing is sensitive to how much liquid you put in.)

 

This cookie recipe makes a double batch.
