Oatmeal Cookies

1 cup margarine

1 cup brown sugar

1 cup white granulated sugar

1 teaspoon vanilla

2 eggs

1 ½ cups flower

1 teaspoon salt

1 teaspoon baking soda

3 cups quick cooking oats

¾ cup coconut

 

Mix flour, salt, and baking soda.  Set aside.

 

Cream margarine and sugars together using mixer.  Then mix in vanilla  and eggs making sure they are well mixed.  Next mix in combined flour, salt, and baking soda.  After these are mixed well, stir in coconut and oats.

 

Bake on greased cookie sheet at 350 degrees for 10 to 15 minutes.  Remove cookies from sheet after they have cooled a couple of minutes and allow them to finish cooling on wax paper.

 

This makes about 4 dozen large, chewy oatmeal cookies.
