Leek Potato Soup

Recipe from Elinor Drake, early 1990’s

 

This is the soup that Allen has made for Irish parties since we started having them.

 

Ingredients (makes about 6 cups or 6 servings):

3 medium - - leeks (white part)

1 medium - - onion

2 tablespoons - - butter

4 medium - - potatoes

4 cups - - chicken broth (or stock)

1 or 2 cups - - cream

Chives for garnish

 

 

Cut fine and sauté the leeks and onions for 3 minutes in the butter.  Add potatoes sliced thin.  Add chicken broth and cook until potatoes are tender.

Process the soup in a blender.  Add cream and warm all to the desired temperature.  Salt & pepper to taste.  Garnish with chives.
