Date Nut Bread
From Mary Anne Beagles in 2006, originally Aunt Maudie’s recipe
(Aunt Maudie is Margaret McGurk Brisco, and raised Howard)
Mary Anne has made this popular recipe for family dinners for years.
Into a bowl stir together and set aside:
1 package (about 8 ounces) of dates
1 teaspoon of baking soda
1 cup of boiling water
In a mixing bowl, mix the following:
1 tablespoon of butter
1 cup of brown sugar
1 teaspoon of vanilla
1 egg
1 pinch of salt
1.5 teaspoons of baking powder
1.5 cups of flour
˝ cup of nuts (black walnuts preferred)
Stir the date mixture into the mixing bowl with the remaining ingredients.
Put in 9”x9” cake pan. Bake at 400 degrees until done (30 or 40 minutes?). If toothpick comes out clean, it is done and watch the cake at the edge of pan so you don’t overcook. Makes 9 servings, and serve with CoolWhip.
