Banana Bread

½ cup margarine

1 ¼  cup sugar

2 eggs

1 teaspoon baking soda

½ teaspoon salt

1 heaping teaspoon cinnamon

2 cups flour

4 medium sized bananas (mashed, preferably very ripe)

 

            Cream together margarine and sugar in a mixer.  Beat in eggs.  In another bowl, mix baking soda, salt, and flour lightly with a spoon.  Add the flour mixture to the sugar/margarine mixture and mix.  Then add the bananas.

Place in 2 greased loaf pans and sprinkle additional sugar on top.  Bake at 350 degrees for perhaps 35 minutes.  Check for doneness with a toothpick and then bake for perhaps 5 more minutes.

1 teaspoon baking soda

½ teaspoon salt

2 cups flour

3 medium sized bananas (mashed, preferably very ripe)

 

Cream together margarine and sugar in a mixer.  Beat in eggs.  In another bowl, mix baking soda, salt, and flour lightly with a spoon.  Add the flour mixture to the sugar/margarine mixture and mix.  Then add the bananas.  Place in a greased loaf pan and bake at 350 degrees for about 50 to 60 minutes.

 

(Note:  Nicoleta adds an extra banana and a heaping teaspoon of cinnamon to this.)
